When GREX is mixed with fried oil, the optimally balanced natural enzymes contained in GREX slowly denature the oil. The oil becomes less likely to bind to water and oxygen, which are factors in oxidation.
Mixing GREX with oil activates the oil, and mixing oil with GREX after cooking refreshes the oil.
This mechanism reduces the oxidation of fried oil and the increase in its acid value.
